Fiaschetto of Torre Guaceto Organic Tomato (Slow Food Presidium) Semi-dry 180 gr
Tomato dried and put in organic extra virgin olive oil
The small tomatoes are washed, cut into two pieces and dried slightly in the oven, put in a jar with the addition of extra virgin olive oil L'Oro del Parco (Organic) by the monumental olive groves of the Torre Guaceto Reserve. By this process, the tomato remains soft, sweet and juicy. Excellent for seasoning canapés, bruschetta, friselline, side dishes, or pasta.
INGREDIENTS: Cherry tomatoes* (60%), extra virgin olive oil* (38%), salt, wine vinegar*.
* Organic product
This small tomato with a particular pointed shape is sweet, juicy, and is historically the basis for the past that families in most of Apulia were produced at home for the winter. Despite this deep tradition, the flask tomato had fallen into disuse and was in danger of disappearing. The company Calemone, the park of Torre Guaceto and Slow Food have developed new crops of tomato Fiaschetto with a biological process. The first experimental camp was started just 15 meters above sea level, a few hundred meters from the sea, in the middle of the reserve of Torre Guaceto. The Fiaschetto tomato has thus returned to our tables. The semi-dry tomato is obtained naturally and without added preservatives and preserved in organic extra virgin olive oil of the same Riserva di Torre Guaceto.

Calemone’s story is intimately entwined with that of the place it was born: the Natural Reserve of Torre Guaceto, an unspoiled paradise, where century-old olive groves alternate with cereal and vegetable crops, a land so marvellous, it cannot but yield exquisite fruit to those who can appreciate quality and authenticity.
It is from passions for this land, and lessons learnt from their fathers, that the idea of enhancing the territory’s historic crops was born. This is what started “Calemone”, a distinctive brand of products such as extra-virgin olive oil from “monumental” olive trees (trees that have been alive for hundreds, if not for thousands of years) and “Fiaschetto di Torre Guaceto” tomatoes from organic farming. Territory, passion, and absolute dedication are behind every Calemone product.
Every phase, from production to processing to packaging is entirely made in Puglia, giving clients an essential guarantee of a product that is excellent and truly Apulian.
The company and their “Fiaschetto di Torre Guaceto” tomatoes have also appeared in the program GEO by Rai, the Italian state broadcaster:
