INGREDIENTS: Fiaschetto di Torre Guaceto tomato 100% (60% whole tomato, 40% tomato purée).
This sweet, juicy tomato, is part of the gastronomic history of much of Apulia: and yet, despite this roots, the Fiaschetto tomato was in danger of disappearing. Hence the challenge of the company Calemone, the park of Torre Guaceto and Slow Food: return to cultivate the tomato Fiaschetto in organic farming. So the first experimental camp was started just 15 meters above sea level, a few hundred meters from the sea, in the middle of the reserve of Torre Guaceto.
The smaller tomatoes when they have reached full ripeness after harvesting are put in pot whole with the addition of Tomato Puree, in this way they combine the flavor and the aromas of fresh tomato with the velvety delicacy of the past.
