The fresh "Fiaschetto di Torre Guaceto" tomato is washed, selected and seared. Then it is simply puréed and bottled.
This small tomato with a particular pointed shape is sweet, juicy, preservable and is historically the basis for the past that families in most of Apulia were produced at home for the winter. Despite this deep tradition, the flask tomato had fallen into disuse and was in danger of disappearing. The company Calemone, the park of Torre Guaceto and Slow Food have developed new crops of tomato Fiaschetto with a biological process. The first experimental camp was started just 15 meters above sea level, a few hundred meters from the sea, in the middle of the reserve of Torre Guaceto. The Fiaschetto tomato has thus returned to our tables. The very fragrant sauce is obtained naturally from the simple cooking of cherry tomatoes and without the addition of preservatives.
