The fresh yellow tomatoes of Apulian production, are washed, selected, and packaged in glass pots. Then the pots with the tomatoes are filled with tomato sauce and pasteurized.

The Italian term "pomodoro" (literally "golden apple") can be traced back to the yellow color of the first fruits appeared in Europe, at the end of the sixteenth century. After a long search, Calemone managed to select a variety of Yellow Cherry Tomatoes characterized by bright yellow fruits with the shape of a date.
The DATTERINO GIALLO tomato is grown close to the sea in the brackish lands of Torre Guaceto. Here the particular composition of the soil and the irrigation water taken from the wells in brackish surface give the tomato a strong sweetness, almost devoid of acidity and a series of unique flavors and aromas. After harvesting strictly by hand, the tomato is placed in a pot together with the tomato puree, so they combine the velvety flavor of the sauce and the flavors of the fresh tomato. It is ideal to accompany fish dishes and delicate recipes with pasta, sauces, creams and velvety.
