Scaldatelli al grano arso (Apulian taralli with toasted wheat flour) 400 gr. Artisanal hand-made product.
"Scaldatelli" are a larger version of taralli, that require a double cooking, and also called "scaldatelle" in other areas of Puglia.
The grano arso or "burnt wheat" comes from an ancient tradition of Apulian farmers, who used to burn stubble to recover the ears of wheat fallen to the ground, and thus integrate the lean amounts of white flour that they could afford to buy. Nowadays burnt wheat is produced with the safe method of roasting, and is used for many preparations such as orecchiette (buy them here!), cavatelli, focaccia. Used in this version of scaldatelli, it gives a distinct aroma, smoked with hints of nuts and coffee.
Ingredients: toasted wheat flour 40%, wheat flour 00 60%, white wine (contains sulfites), salt, water, olive pomace oil, extra virgin olive oil.
