Calamarata is a tube-shaped pasta: among Italy's many formats of pasta, Calamarata is one of the most popular pasta shapes in the south regions. It is a type of pasta whose smooth surface and shape of a tube or ring are reminiscent of squid rings. The term "calamaretti" can indicate the same format or a smaller version of calamarata. Another similar format is "mezzi paccheri".
It is traditionally eaten with a seafood condiment: the name "calamarata" is also given to the traditional pasta dish prepared with that format of pasta, calamari squid and tomato.
This pasta is artisanal, very slow dried and bronze cut. Bronze cutting confers a greater roughness onto the surface of the pasta, helping to retain sauces and seasonings. Slow drying is in contrast with techniques adopted in industrial pasta production today, according to which pasta is usually dried at high temperatures in a short time, altering its composition and taste. The slow drying process, in contrast, preserves the pasta's original properties and composition.
