The Bronte Green Pistachio PDO: an Excellence among Sicilian Agro-Food Specialties

Pistachio ice cream, known for its sweet and refined flavor and vibrant green hue, is a delight that has enchanted us since childhood. This typical Sicilian product grows on a tree that thrives in the warm climates of the Mediterranean and the United States. The pistachio tree can reach 5–6 meters in height and bears fruit every other year, with the harvest taking place in autumn. Iran, the U.S., and Turkey are the main global producers.

Bronte Pistachio: a Sicilian Treasure

Although Italy ranks only eighth in global production, it boasts top-quality local varieties such as the Bronte Green Pistachio PDO—one of the most celebrated Sicilian agro-food specialties and a Slow Food presidium. This typical Sicilian product is grown exclusively in the municipalities of Bronte, Adrano, and Biancavilla, on the fertile volcanic soils of Mount Etna’s western slopes. These unique conditions give the Bronte pistachio its vivid green color and intense aroma. Much of the production is small-scale and traditional, with many growers cultivating just one hectare.

After harvest, the fruit is hulled, dried, and sold either shelled or unshelled. Every September, Bronte hosts a festival dedicated to its most famous product, attracting tourists and gourmets from around the world to taste an array of pistachio-based creations.

The pistachio is used in countless delicacies: from the famous gelato to handmade pasta, sauces for first courses, pistachio-flavored mortadella, and a wide variety of sweets such as pistachio spread, biscuits, nougat, brittle, chocolates, and even pistachio panettone.
