The amberjack is a precious blue fish that lives in the Mediterranean and in the Pacific. It lives deep off the coast and can reach two meters in length and fifty pounds in weight.
Ricciola is a fish with high nutritional values, rich in unsaturated fats, mineral salts and with a moderate intake of calories.
It is one of the most valuable fish used in Sicilian cuisine for its versatility of use.
